String beans (also known as runner beans) require cutting prior to cooking as they are not tender enough to simply break. Their thick pods contain more satiating cellulose than green beans for instance. They are available fresh and require cooking for ca. 30 minutes to ensure they taste tender. They are highly suited to stews, and are a fixed feature in Turkish and Persian cuisine.
