Broad beans, also known as field and horse beans, grow inside green pods. They have to be removed from the pods prior to cooking. With large beans it is also better to remove the skin as this tends to have a slightly bitter taste. Broad beans are available fresh or dried and require a cooking time of ca. 20 minutes. The dried beans need soaking overnight in cold water. As a puree or flour they were once an important source of protein for poor people. Broad beans were only replaced by the potato as the staple diet about 200 years ago. They are also excellently suited as a hearty side vegetable, in soups and stews, as well as in dips.
