Classification into groups We understand lettuce to be a leaf vegetable that may be eaten raw in its fresh state. In botanical terms it may be divided into two groups:
- Lettuce group
These lettuces contain only a small amount of bitter substances. Examples are butterhead lettuce, iceberg lettuce, batavia lettuce and romaine lettuce.
- Chicory group
Lettuces in this group have varying amounts of bitter substances. They generally contain more vitamins and minerals than the lettuce group. Typical chicory varieties are endive lettuce, chicory and radicchio.
