  • Do not buy mandarins with loose peels; these will spoil soon.
  • Lemons should feel as light as possible! Light lemons have thinner rinds and fewer seeds.
  • Citrus fruits should be stored at a moderate room temperature, at which they will keep for about one to two weeks. Since they are cold sensitive, they should not be stored in the refrigerator.
  • Citrus fruits are rich in vitamin C. Since this vitamin is quite heat sensitive, citrus fruits should only be prepared immediately before consumption; warm dishes should be gently cooked over a low heat and not kept warm.
