Citrus fruits are a good source of vitamin C – especially in the winter, when local fruits are only available in limited quantities. Vitamin C strengthens the immune system and is important for the development of connective tissue, bones and teeth. As regards minerals, citrus fruits contain especially large quantities of potassium. Potassium is necessary for maintaining fluid balance as well as nerve and muscle metabolism. In addition, citrus fruits contain secondary plant compounds that can be found in the spongy, white tissue underneath the rind. These can slow down ageing processes and protect from cancer.
