Kale Unlike the other types of cabbage, kale does not form a head but, depending on the variety, has leaves that are curly to a greater or lesser degree. Generally, this undemanding, winter-hardy cabbage is not harvested until after the first frost, since that is when its flavour becomes sweeter. The cold weather also makes it easier to digest. Often fresh leaves are sold ready shredded in portions - thus avoiding its rather tedious preparation in the kitchen. It also spends a long time on the stove, but your guests will love the resultant unique flavour. Kale contains several nutrients, the most noteworthy being potassium, iron, vitamin C and calcium.
