Types of sugar – A diverse spectrum Commercially, sugar is available in a variety of different forms, which can be categorised according to purity, processing, shape and colour. Thus, in addition to pure sugar, there are also sugars that have been enriched with additives for special applications as well as sugar products. Brown sugar is an intermediate product of the sugar manufacturing process. This type of sugar is brown because it still contains residual amounts of sugar syrup. With its caramel-like flavour, it is especially popular in baking. Another example, preserving sugar, has been specially processed to be used in the preparation of marmalades, jams and jellies. It is a product made from white sugar, pectin and citric acid. Glucose or starch syrup is an example of a sugar product. This mix of mono-, di- and polysaccharides, which is made from starch, is mainly used in the confectionery industry.
