Use of sucrose in foodstuffs and at home In ancient times, honey was used as the primary sweetener, and later supplemented by sugar cane juice. Today, the food industry processes 83 per cent of the sugar manufactured, primarily for beverages as well as candies and baked goods. Sugar is also used to enhance the flavouring of sauces and sausages. Seventeen per cent of the sugar manufactured is packaged in small amounts and sold directly to consumers. Sugar has as many diverse uses in the household kitchen as it does in industry: to preserve marmalades, bake cakes or for use as a cooking ingredient – and of course also as a sweetener in coffee or tea.
