Jelly babies self-made

Ingredients:

  • 400-500 g cornflour (potato starch, potato flour)
  • 15 g gelatine (powder)
  • 35 ml water
  • 30 g fruit syrup (e.g. strawberry or cherry syrup)
  • 20 g sugar
  • 10 g honey (where possible runny)
  • 3 g citric acid (or 10ml concentrated lemon juice).

Preparation:

Cover an oven tray with the cornflour. Mix the gelatine thoroughly with 25 ml water. Leave the gelatine to swell for approx. 15 mins. Using a water bath heat the gelatine to 75° C at the most. Dissolve the sugar and citric acid in 10 ml water. Firstly, add the honey and then the sugar mixture to the gelatine. Mix all the ingredients together thoroughly!

Finally mix in the fruit syrup. Leave the mixture to stand for a few minutes until it becomes clear. Create hollows in the cornflour with the bottom of a clean glass. With the help of a funnel carefully fill these hollows with the mixture.

The jelly babies have to stand for at least three hours. Finally sprinkle a bit of cornflour over the jellies to avoid them sticking together.
