Strawberry-Yoghurt Cream

Ingredients for 4 persons:

  • 500 g strawberries
  • 400 g natural yoghurt
  • 1 lemon
  • 2 packs vanilla sugar (each 8 g)
  • 8 leaves of gelatine
  • 2 tbsp. icing sugar
  • 200 ml cream

Preparation:

  1. Soak 4 leaves of gelatine in cold water. Rinse and clean the strawberries. Puree half the fruit with the juice and peel of the lemon and a pack of vanilla sugar. Cut the remaining strawberries into small pieces. Dissolve the gelatine and mix into the puree. Cool in the refrigerator until the mixture begins to gel, then mix in the strawberry pieces.
  2. Soften the remaining gelatine. Blend the yoghurt in a bowl with icing sugar and a pack of vanilla sugar until smooth. Dissolve the gelatine and mix into the yoghurt. As soon as this mixture begins to gel, whip the 200 ml of cream until stiff and then blend in. Place alternate layers of the strawberry puree and the yoghurt cream in tall glasses. Cool the dessert for ca. 60 minutes in the refrigerator.
  3. Serve garnished with lemon peel.
