Apple in elderberry jelly
Pin itIngredients for 4 persons:
- 1 large apple
- 1 tbsp. sugar
- a pinch of cinnamon
- ¼ l unsweetened elderberry juice
- 1 tbsp. honey
- the juice and rind of half a lemon
- 3 leaves gelatine or 5 g white or red powdered gelatine
- 200 g whipping cream
- 1 packet of vanilla sugar
Preparation:
- Peel the apple and remove the core. Cut 4 slices across the apple and soften in 2 tablespoons of water, the sugar and the cinnamon. Place to one side.
- Boil the elderberry juice with honey, lemon juice and the lemon rind. Dissolve the soaked gelatine in it. First of all, pour a little juice on the bottom of 4 shallow bowls and leave to cool for 20 minutes.
- Place the steamed apple rings on the jelly and pour the remaining juice on top of them. Put in the fridge and leave the jelly to set for 25 minutes.
- Serve in the bowls or turn out. Serve with cream whipped with vanilla sugar.
